1 liter full cream milk, 6 tablespoons of semolina or rava, 6 tablespoons sugar, 1/2 teaspoon cardamom powder, a little saffron and 2 tablespoons chopped almonds.
Add milk to a big pot and boil it well. When the milk boils well, put the gas on medium heat and add semolina to it while stirring continuously and cook it until the milk becomes slightly thick. Now add saffron to it and keep cooking it until it starts to look thick like halwa. After a while, add sugar and cardamom powder and mix well. Now decorate it with chopped almonds and serve. You can serve this firni even after cooling and if you want, you can also eat it hot.
1 cup sevai, 1 liter milk, 1 cup jaggery grated, ½ cup of dry fruits (cashews, almonds, raisins) and 2 teaspoons ghee
First of all, put 1 liter of milk in a large pot and let it boil well. Try to boil the milk for a long time, so that the milk becomes thick. Now heat 2 teaspoons of ghee in a pan and fry it well by adding dry fruits to it. Then fry the sevai in it till it becomes light golden and then add three cups of water to it. Now let Sevai cook for 5 minutes. Mash Sevai again and check, now add fry dryfruits and grated jaggery. After adding jaggery, Sevai will start releasing water, so let Sevai cook for 5 minutes. After 5 minutes, when the sevai cooks well and dries the water, turn off the gas and leave the sevai to cool down. Now put two cups of lukewarm milk in a pain in a pan and stir well with a spoon. Then let it cook for 2 minutes, then turn off the gas. Now keep the sevai covered for five minutes. Take your hot tasty Kashmiri jaggery Sevai.
