- Spicy green chilli – 250 grams
- Mustard or black mustard – 4 tbsp
- Salt – 3 tbsp
- Cumin – 1 tbsp
- Fennel – 1 tbsp
- Fenugreek – one spoon
- Asafoetida – less than 1/4 tsp
- Turmeric powder – one teaspoon
- Garam masala – half teaspoon
- Lemon juice or vinegar – 2 tbsp
- Oil
Method:
1. Preparing Green Chillies:
- Wash and dry the green chillies so that there is no water left on them. Then rip the chillies lengthwise, but make sure that the chillies remain attached on both sides.
2. Preparation of spices:
- First of all, lightly fry fenugreek seeds and fennel in a pan so that it smells. Then cool it and grind it coarsely.
- Grind the mustard seeds coarsely.
3. Mixing spices:
- Add turmeric powder, ground fenugreek, fennel, mustard, red chili powder, and salt in a vessel. Also add lemon juice to it and mix it well.
4. Stuffing the chillies with spices:
- Now fill this prepared masala inside the green chillies. Fill the spices well in all the chillies so that the flavor gets mixed well in the chillies.
5. Heating Oil:
- Heat mustard oil in a pan and let it cool. When the oil cools down, add asafoetida and then pour this oil over the spiced chillies.
6. Preparing the pickle:
- Now fill the pickle in a clean and dry glass jar. Keep it in the sun for 2-3 days so that the chillies and spices mix well and the taste of the pickle increases.
Serving:
- After 2-3 days your green chilli pickle is ready to eat. It can be served with paratha, roti, dal-rice or any food.
