Ingredients:
2 cups whole wheat flour
2 cups grated cauliflower
1 tsp ajwain
1 tsp cumin powder
1 tsp coriander powder
Salt to taste
Fresh coriander leaves
Ghee or butter
How to make it at home:
Mix atta, and salt in a bowl and mix well to knead a soft dough.
Grate cauliflower and squeeze out excess water.
Add ajwain, cumin powder, coriander powder, salt and chilli and mix well.
Roll out dough into flatbread and fill it with cauliflower in the centre.
Form a paratha, and cook it on tawa until golden brown.
Top it with butter and serve hot with yoghurt.
Methi Paratha
Ingredients:
2 cups whole wheat flour
1 cup fresh methi leaves, chopped
1 tsp cumin seeds
1 tsp red chilli powder
Salt to taste
Water as needed
Ghee or oil for cooking
How to make it at home:
Combine the whole wheat flour, cumin seeds, red chilli powder, and salt in a bowl.
Slowly add water to knead the dough.
Add clean and chopped methi leaves into the dough and mix well before kneading.
Roll the rotis and cook them on hot tawa.
Cook until golden brown from both sides and top with ghee.
Serve hot with achaar or yoghurt.
Aloo Paratha recipe
Ingredients:
2 cups whole wheat flour
2 large potatoes, boiled and mashed
1 onion, finely chopped
1-2 green chillies, chopped
1 tsp cumin seeds
1 tsp garam masala
Salt to taste
Fresh coriander leaves, chopped
Ghee or oil for cooking
How to make it at home:
In a large mixing bowl, add the whole wheat flour and salt. Gradually add water and knead to form a smooth dough.
In a separate bowl, mix the boiled and mashed potatoes with chopped onions, green chillies, garam masala, cumin seeds, coriander leaves, and salt.
Roll out small balls to form paratha.
Fill the centre with potato filling and roll into thin and soft paratha.
Cook it well on tawa until golden brown.
Serve hot with yoghurt, butter and achaar.
