You may have asked yourself this question many times while making yellow dal. If you also want to know the answer to this question, then know that the taste of dal is hidden behind the tempering applied in it. If you also want to taste dhaba-like tasty dal at home, then follow this Punjabi dal tadka recipe.


Ingredients for making Punjabi Dal Tadka-
-½ cup yellow arhar dal
-¼ cup yellow moong dal
-2 tbsp oil
-½ cup chopped red onion
-1 teaspoon finely chopped ginger
-1 teaspoon finely chopped garlic
-1 teaspoon chopped green chilli
-½ cup chopped tomatoes
-1 teaspoon coriander powder
-½ teaspoon turmeric powder
-1 teaspoon Kashmiri red chilli powder
-1 teaspoon salt or as per taste
-1 tablespoon lemon juice


For tempering-
-2 tbsp ghee
-1 teaspoon cumin
-¼ teaspoon asafoetida
-2-3 whole dry red chillies
-2 tbsp finely chopped garlic
-1 teaspoon Kashmiri red chilli powder
-2 tbsp chopped coriander


Method of making Punjabi Dal Tadka-
To make Punjabi Dal Tadka, first wash Arhar Dal and Moong Dal thoroughly with water 2 to 3 times. After this, soak the lentils in 2-3 cups of water and keep them aside. Now keep the oil in the cooker to heat. When the oil becomes hot, add onion to it and cook while stirring until it turns light brown. After this, add ginger and garlic in the cooker and cook for 2 more minutes. In the next step, add green chilli, tomato, coriander powder, turmeric powder and Kashmiri red chilli powder and cook for 5 minutes. After this, drain the water from the lentils and put it in a vessel with 3 cups of water and salt and mix well.


Keep the cooker flame on medium high. After this, close the lid of the pressure cooker and cook the dal on high flame till one whistle. After that reduce the flame and cook for 10 to 12 minutes more. After this, remove the cooker from the flame and let the pressure release on its own. After this, open the lid of the cooker, add lemon juice to the cooker and mix the dal well with the help of a mixer until the dal becomes slightly thick. Check the salt at this stage, if necessary you can increase the amount of salt.


Now prepare the dal tadka. To prepare dal tadka, heat ghee in a small pan on medium high flame, add cumin and asafoetida and fry for 4-5 seconds. Now add dry red chilli and garlic and fry till it turns golden brown. After this, turn off the flame and add Kashmiri red chilli powder. Turn this prepared tadka in the cooker and cover it immediately. After mixing the dal tempering well, add green coriander to garnish and serve hot with rice or roti.
