I’ve been a dietitian for nearly 20 years, and I’m often asked about food storage—what’s safe, what’s best, and how long different foods actually last. I can quickly rattle off the basics: leftovers keep for three to four days, cooked food shouldn’t sit out for more than two hours, and ground beef should be frozen within two days.


But when it comes to bananas, my track record isn’t great. My freezer is regularly stocked with overripe bananas that are destined to become banana bread. I decided to consult some experts, and based on their advice, I found some clever storage tools on Amazonsuch as this sleek Vroomium banana stand and this under-cabinet banana hook made by Bussdis for just $8.


I spoke with Mark McShane, a Food Hygiene Certificate expert in the U.K., and Ashley Miller, M.P.H., CP-FS, REHS/RSSenior Program Coordinator at the National Environmental Health Association. Their advice was refreshingly simple: store bananas at room temperature, in a well-ventilated spot and out of direct sunlight.

McShane recommends using a banana hanger to prevent bruising and allow air to circulate evenly around the fruit. That airflow matters because bananas naturally release ethylene gas, a compound that speeds up ripening. “Storing bananas at room temperature allows them to ripen evenly, which is ideal for flavor and texture,” said Miller.


To slow things down, Miller suggests keeping bananas away from other ethylene-producing fruits like apples, avocados, tomatoes, and stone fruits. Separating them—even from each other—can help reduce the concentration of gas around them and extend their shelf life.


Once bananas are fully ripe, refrigeration can buy you a few extra days. “The peel will turn brown in the fridge because it’s sensitive to cold,” McShane explains, but the fruit inside stays fresh. “Although the cell wall on the outside of the banana degrades, the banana has an internal protective layer which preserves the taste and texture of the fruit inside.”


The timing matters, though. According to Miller, refrigerating bananas too early can backfire. Temperatures below about 55°F can disrupt the ripening process, leading to off flavors, uneven ripening, and a less appealing texture. In other words, wait until they’re ripe before moving them to the fridge.


One final mistake both experts highlighted: storing bananas in enclosed spaces like plastic bags. Trapped ethylene and moisture can accelerate ripening and even encourage mold growth.


With a few small adjustments, it’s much easier to keep bananas at their peak a little longer. And if you want to make it even easier, there are a few smart storage tools that can help.
