This delicious recipe, shared by Sainsbury's Magazine, is a flavoursome family meal that will "bring sunshine to the colder days". The "Smoky Spanish sausages with aioli" recipe uses chorizo-style sausages, which can be purchased from any UK supermarket.
Sainsbury's sells Chorizo Style Sausages, Taste the Difference, for £3, while Waitrose has Chorizo Style Pork Sausage for £4. The Spanish recipe takes only 30 minutes to make and serves four people. This is also a very nutritious recipe as chorizo is known to have many health benefits, including its high protein content, vitamin B12 and iron.
Smoky Spanish sausages with aioli Ingredients
- 600g baby potatoes, quartered
- Three peppers, cut into chunks
- 200g cherry tomatoes, halved
- 2½ tbsp olive oil
- One tbsp smoked paprika
- Eight chorizo-style sausages
- 75g pitted black olives
For the aioli
- 75g light mayonnaise
- One garlic clove, crushed
- One tsp Dijon mustard
- One tsp lemon juice
Preheat oven to 220°C, fan 200°C, gas 7. In a pan, boil water and cook the potatoes for four minutes. Drain and transfer to a large bowl with the peppers and tomatoes. Add olive oil, the smoked paprika and seasoning. Place on the tray and cook in the oven for 18-20 minutes. Heat one tablespoon of olive oil in a large pan and cook the sausages for 15-20 minutes over medium-high heat, until cooked. Add the olives to the roasted veg, and mix everything around well. Put back in the oven for about three to five minutes until the vegetables are tender. Make the aioli by mixing all the ingredients in a small bowl and season to taste. Serve the sausages and veggies with the aioli, and enjoy!
