To make these laddus, we will use makhana and threaded sugar candy, both these things also have cooling properties. Protein, fiber, B5, B3, calcium, potassium, magnesium, manganese, zinc, selenium, vitamin C, folate, vitamin A, and K are also found in whole moong. Material
Whole green moong – 1 cup
Makhane (Fox Nuts)-½ cup
Thread sugar candy (or ground sugar candy) – ¾ cup
Desi Ghee-½ cup
Cashews-8–10 (chopped)
Almonds-8–10 (chopped)
Cardamom powder-1 tsp
Method
- First of all, wash whole green moong thoroughly and soak it for 4-5 hours. Then drain the water and dry it in the shade. After drying, grind it coarsely.
- Add some ghee in the pan and fry the makhanas till they become crisp. After cooling, grind them lightly and coarsely.
- Add ghee in the pan and fry the ground moong on low flame till it becomes golden and aromatic. This will take some time (10–15 minutes), but this step determines the taste.
- Add makhana, chopped dry fruits and cardamom powder to roasted moong. Turn off the gas and let it cool slightly. Now add ground sugar candy to it. When the mixture is slightly hot, make small laddus with your hands.
