In Hinduism, the festival of Navratri is a time of devotion, fasting, and celebration. For nine days, many people observe fasts and prepare special dishes that are traditional, yet often intricate to make. Although fried foods are frequently consumed during fasting periods, they can leave the stomach feeling heavy and the body feeling lethargic. Instead, healthy alternatives can help keep you energized throughout the day.
One such delicious dish is *Kuttu Dosa*—a light, nutrient-rich, and easy-to-prepare recipe that is perfect for breakfast during Navratri. Buckwheat (*Kuttu*) is gluten-free, high in fiber, and packed with energy, making it an excellent choice for fasting days.
Ingredients: 2 cups Buckwheat flour (*Kuttu ka atta*), 3-4 boiled potatoes, 1 teaspoon black pepper powder, Rock salt (*Sendha namak*) (to taste), 1 teaspoon finely chopped ginger, 1 teaspoon finely chopped green chilies, 1 teaspoon mustard seeds (*Rai*), and ½ cup Ghee.
Method 1: Prepare the Potato Filling: Heat a little ghee in a pan and add the mustard seeds. Once the mustard seeds begin to splutter, add the boiled potatoes (lightly mashed). Mix in the black pepper, rock salt, and ginger. Cook for a few minutes until all the flavors have blended well. Set this mixture aside.
Method 2: Prepare the Dosa Batter: In a mixing bowl, mash one of the boiled potatoes and combine it with the buckwheat flour. Add the rock salt, black pepper, ginger, and green chilies. Gradually add water while mixing to form a smooth batter.
Method 3: Cook the Dosa: Grease a pan with ghee, pour a ladleful of the batter onto it, and spread it evenly. Cook over medium heat until golden brown, then flip and cook the other side as well. Place the potato filling in the center of the dosa, fold it over, and serve piping hot.
Serve your Kuttu Dosa with fresh coriander chutney to further enhance its flavor. If you are looking to try something new, you can also add pieces of Arbi (Taro root) to this dish for a unique taste experience. This dish is not just for fasting days; it serves as a nutritious breakfast option for anyone looking to kickstart their day with a burst of energy.
