The festival of Navratri is going on, and people observing fast during this time need such food items which are light as well as provide energy. Usually, sago or makhana kheer is made during the fast, but if you want to try something new and nutritious, then sweet potato kheer can be a great option.
This kheer is not only delicious but also healthy, and it is very simple to make. The natural sweetness and nutrients of sweet potato make it an ideal dish for fasting, keeping you feeling refreshed and energetic throughout the day.
To make this kheer, first take 2 to 3 sweet potatoes, wash them thoroughly and boil them in the cooker for 2-3 whistles. Once cooled, peel them and mash or grate them well, so that no lumps remain. Now heat a teaspoon of desi ghee in a wok or heavy bottom pan, add prepared sweet potatoes and fry on low flame for 2-3 minutes. This will give a different aroma and taste to the kheer.
After this, slowly add half a liter of milk and keep stirring, so that the mixture gets mixed well and does not stick to the bottom. When the milk boils, reduce the flame to medium and let the kheer cook for 5 to 7 minutes. It is important to keep stirring in between, so that the kheer thickens well.
When the kheer starts taking creamy texture, add sugar or jaggery powder as per taste. Along with this, add half teaspoon cardamom powder and chopped dry fruits like almonds, cashews, pistachios and raisins. Mix everything well and cook for 2 more minutes, so that the flavors get mixed well.
Now turn off the gas. Your delicious and nutritious sweet potato kheer is ready. You can serve it hot or eat it cold. When cooled, its taste becomes even thicker and richer, which is no less than any sweet.
