Sunday: Chicken Shawarma Bowls

I love chicken shawarma, and this bowl is a great way to enjoy those delicious flavors with some fiber-packed additions. Bulgur cooks quickly and offers more fiber than traditional rice or couscous. The beet tzatziki and cucumber-tomato salad add vibrant colors and freshness to the plate. This is a meal that makes me look forward to having the leftovers the next day.

If you love spinach-artichoke dip, this skillet dinner is about to become one of your new favorites. Butter beans bring a creamy texture along with fiber and plant-based protein, making this dish both comforting and filling. Plus, it all comes together in one skillet for a veggie-forward meal with minimal dishes to clean up afterward.

Tuesday: Meatballs with Lemon-Garlic Orzo

This dish is packed with the seasonal flavors I love in the springtime, with a bright pop of citrus throughout. The tender meatballs add protein, giving the meal more staying power. Fresh herbs like dill, mint and parsley make it feel vibrant, and the yogurt sauce ties everything together.

Midweek calls for something colorful and energizing, and this bowl delivers. Chickpeas are a fiber superstar and are also rich in antioxidants that support overall health. Here they’re paired with crisp veggies and a creamy green goddess dressing for a bowl that’s equal parts nourishing and flavorful. Not to mention, it can be prepared in just 20 minutes.

This cozy soup proves that comfort food can also be nutrient-dense. Packed with chicken, beans and vegetables, it delivers protein and fiber to help keep you satisfied. I’ll serve it with a whole-wheat baguette to dip in the delicious broth. And since it makes six servings, I plan to freeze some for another day when I need something quick.

I’ll wrap up the week with a fun, plant-forward twist on burger night. These black bean and veggie smash burgers are hearty, flavorful and full of fiber. Smashing them into the pan helps the edges get nice and crispy. Pile them onto whole-grain buns with your favorite toppings for a satisfying and customizable meal.
