On one hand, there are the sweet treats of Gudi Padwa; on the other, the festive vibrancy of Eid. Instead of spending hours in the kitchen making elaborate preparations, you can whip up these fantastic, quick-to-make dishes in just 10 minutes, saving you both time and effort. Here are some ‘smart’ and easy recipes for both festivals…

For Potazos Masala Corn Canapés: Take a microwave-safe bowl. Add 1 cup of sweet corn, 1 tablespoon of finely chopped onion, 1 tablespoon of chopped capsicum (bell pepper), 1 teaspoon of finely chopped green chilies (to taste), a few drops of lemon juice, chopped coriander, ½ teaspoon of salt (to taste), ⅓ teaspoon each of red chili powder and black pepper, 1 tablespoon of grated cheese, and ¼ cup of milk. Mix well and microwave for 1 minute, or until the cheese has melted. Assembly: Arrange Britannia 50-50 Potazos on a plate, spoon the corn mixture over the top, and serve immediately.
Sabudana Tikki Cups Ingredients:
1 cup soaked sago (sabudana), 2 boiled and mashed potatoes, ¼ cup roasted peanuts, 1 finely chopped green chili, 1 teaspoon cumin seeds, salt to taste, chopped coriander, ½ cup thick yogurt. Method: Combine the sago, potatoes, peanuts, cumin seeds, green chili, coriander, and salt. Shape the mixture into small cup-like forms and place them in a greased mold. Grill or microwave until they are crispy on the outside and soft on the inside. Fill with chilled yogurt, garnish, and serve. Millet Kesari (Gudi Padwa Special) – Ingredients:
½ cup millet, 1 cup sugar, 1½–2 cups water, ½ tsp cardamom powder, 3 tbsp ghee, 2 tbsp cashews, 2 tbsp raisins, a pinch of food coloring (optional). Method: Roast the millet; once cooled, grind it to a consistency resembling semolina (sooji). Roast the cashews and raisins separately and set them aside. Cook the millet in hot water until it becomes soft. Add the sugar and mix thoroughly. Add the ghee, cardamom powder, and food coloring (if using), and cook until the mixture thickens. Stir in the dry fruits and serve hot.
Biscotti Rabri Fusion (Eid Special) – Ingredients:
Biscotti sticks, 2 cups thickened milk (sweetened with jaggery or honey), and cardamom powder. Method: Prepare the thickened milk (Rabri) and stir in the cardamom powder. Serve hot, accompanied by the biscotti sticks. Dip and enjoy!
