News India Live, Digital Desk: Moonglets are often called ‘vegetarian omelettes’. It is made from yellow moong dal, hence it is an excellent source of protein. This is a perfect dish for children’s tiffin or for morning breakfast. Let us know the step-by-step method of making it. Essential Ingredients: Yellow Moong Dal: 1 cup (soaked for 3-4 hours) Vegetables: Finely chopped onion, capsicum, sweet corn and grated carrot. Spices: Ginger-green chilli paste, asafoetida, turmeric, red chilli powder and salt (as per taste). Others: Finely chopped coriander, butter and Eno or Baking soda. For garnishing: Long chopped ginger and beetroot flakes. Method of preparation (Step-by-Step Recipe) 1. Prepare the batter: First of all, grind the soaked moong dal with some water in a mixer and make a thick and smooth paste. Keep in mind that the batter should not be too thin.2. Combine vegetables and spices: Transfer the lentil paste to a large bowl. Add ginger-green chilli paste, asafoetida, salt and turmeric and mix well. Now add all the chopped vegetables and green coriander to it.3. Secret to making fluffy: When you want to make moonglets, take out a cup of batter separately and add a little eno to it. Beat it gently until the batter becomes puffy.4. Cook like this (Cooking Process): Heat some butter in a non-stick pan. Now pour the prepared batter in the pan and spread it a little thick. Add ginger and beetroot flakes on top. Cover it on low flame and cook for 3-4 minutes until the bottom surface becomes crisp. Turn it over and make a small ‘X’ cut in the middle and add some more butter so that it gets cooked well from inside. 5. Serve: When the moonglets become golden brown and crispy on both sides, serve it with hot mint chutney or tamarind dry ginger.
