Bhature: Everyone’s mouth waters on hearing the name of Chole Bhature. As wonderful as it looks, it is equally harmful for health. Because Bhature is deep fried. Besides, it is made of flour which causes double harm to health. Maida is actually a refined form of wheat but during processing all the essential nutrients are removed from it. But there is no need to panic because here we are going to tell you how you can make puffed bhature with wheat flour.
Material
Wheat flour: 2 cups
Semolina: ¼ cup (this keeps the bhature crunchy and fluffy)
Curd: ½ cup
Sugar: 1 tsp
Salt: as per taste
Baking Soda: ¼ tsp
Oil: 2 tbsp + for frying
Lukewarm water: for kneading the dough
Method of preparation
Prepare the dough: Mix flour, semolina, salt, sugar and baking soda in a large bowl. Now make a space in the middle and add curd and oil.
Kneading: Knead a soft dough by adding lukewarm water little by little. Keep in mind that the dough should neither be too hard nor too wet.
Kneading: Knead the dough well for 5-7 minutes and knead it by kneading it. This will form gluten in the flour and the Bhature will rise properly.
Let rest: Apply some oil on the surface of the dough and cover it with a wet cloth. Leave it in a warm place for at least 2 to 3 hours.
Rolling: Make balls and apply light oil and roll them. Keep in mind that Bhatura should neither be too thin nor too thick.
Frying: Let the oil get very hot in the pan. Put the Bhatura in oil and press it lightly with a ladle. As soon as it swells, turn it over and fry until golden.
