  • 3-4 medium sized tomatoes

  • 1 cup thick sev

  • 2 tbsp oil

  • 1 tsp mustard

  • 1/2 tsp cumin

  • 1/4 tsp turmeric powder

  • 1 tsp red chilli powder

  • 1 tsp coriander powder

  • salt as per taste

  • 1 tsp sugar (optional)

  • 2 tbsp green coriander (finely chopped)

  • 1 cup water


How to make Sev Tomato Sabji


Sev tomato curry can be prepared in minutes. To make this, first wash the tomatoes thoroughly and cut them into fine pieces. If you want, you can also make puree by grinding the tomatoes lightly in a mixer. This makes the vegetable gravy smoother and tastes better.


Heat oil in a pan on medium flame. After the oil is hot, add mustard seeds and cumin seeds. When it starts crackling, add chopped tomatoes to it. Cook the tomatoes thoroughly for 3-4 minutes so that they become soft and mix well with the spices.


Now add turmeric powder, red chili powder, coriander powder and salt to the tomatoes and mix well. After this, add some water to it and let the spices cook for 4-5 minutes. When the oil starts separating from the spices and the gravy becomes a little thick, then you can add some sugar to it to taste.


When the gravy is cooked well, slow down the flame and add thick sev to it. After adding sev, mix the vegetables lightly and let it cook for 1-2 minutes. Keep in mind that do not cook the sev for too long, otherwise they may become too soft. Finally add green coriander on top and turn off the gas.


Serve hot sev tomato curry with roti, paratha or puri. Its sweet-sour and slightly spicy gravy doubles the taste of the food. This vegetable is especially useful when you want to make something tasty at home quickly.
