Chicken Soup with Jasmine Rice and Ginger
This soothing soup combines tender chicken, fragrant jasmine rice, and the gentle heat of fresh ginger. It’s nourishing, aromatic, and perfect for a comforting meal.
Ingredients (Serves 4–6)
- 2 tbsp olive oil
- 1 lb boneless chicken thighs or breast, cut into bite-sized pieces
- 1 medium onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 2 tbsp fresh ginger, grated
- 6 cups chicken broth
- 1 cup jasmine rice, rinsed
- Juice of 1 lemon
- 2 tbsp fresh cilantro or parsley, chopped
- Salt and black pepper to taste
Method
- Cook the chicken: Heat olive oil in a large pot. Add chicken pieces, season with salt and pepper, and cook until lightly browned. Remove and set aside.
- Sauté aromatics: In the same pot, add onion, carrots, celery, garlic, and ginger. Cook until softened and fragrant.
- Simmer the soup: Pour in chicken broth, add rice, and return chicken to the pot. Simmer for 20–25 minutes, until rice is tender and chicken is cooked through.
- Finish with lemon and herbs: Stir in lemon juice and fresh cilantro or parsley. Adjust seasoning to taste.
- Serve: Ladle into bowls and enjoy hot.
