The word “Gavran” refers to something that comes from the village or countryside, and this curry perfectly reflects that authentic rural style of cooking.

Gavran-style chicken curry recipe

Ingredients


For the chicken curry



  • 500 grams chicken (bone-in pieces preferred)

  • 2 large onions, finely chopped

  • 2 tomatoes, chopped

  • 1 tbsp ginger-garlic paste

  • 3 tbsp oil

  • Salt to taste

  • Fresh coriander leaves for garnish


Whole spices



  • 1 bay leaf

  • 1 small cinnamon stick

  • 3 cloves

  • 3 black peppercorns


For the Gavran masala



  • 1 tbsp grated dry coconut

  • 1 tbsp coriander seeds

  • 1 tsp cumin seeds

  • 4–5 dried red chillies

  • ½ tsp turmeric powder

  • 1 tsp red chilli powder

  • 1 tsp garam masala


How to make: 


  • Heat a small pan and dry roast the grated coconut, coriander seeds, cumin seeds, and dried red chillies until aromatic.

  • Allow the mixture to cool and grind it into a coarse paste with a little water.

  • Heat oil in a heavy-bottomed pan. Add bay leaf, cinnamon, cloves, and peppercorns.

  • Once fragrant, add chopped onions and cook until they turn golden brown.

  • Stir in the ginger-garlic paste and sauté for a minute until the raw smell disappears.

  • Add chopped tomatoes and cook until the mixture becomes soft and slightly oily.

  • Add the chicken pieces to the pan and mix well so they are coated with the onion-tomato masala.

  • Cook for 5–7 minutes while stirring occasionally.

  • Now add the freshly ground masala paste along with turmeric, red chilli powder, salt, and garam masala.

  • Mix everything well so the spices blend evenly.

  • Add about one cup of water and bring the curry to a gentle boil.

  • Cover and cook on low heat for 20–25 minutes until the chicken becomes tender and the gravy thickens.
