Material
Leftover rice: 1 cup

Semolina: ½ cup (for crunch)

Curd: ¼ cup (for sourness and softness)

Water: as required

Salt: as per taste

Rice flour: 2 tbsp

Method of preparation
Prepare the batter: Add leftover rice, semolina, curd and a little water to a mixer jar. Grind it until it becomes a smooth paste.

Check consistency: Take out this paste in a bowl. Prepare a consistency like dosa batter by adding salt and a little more water to it.

Let rest: Cover the batter for 10-15 minutes. With this the semolina will absorb the water and the dosa will become better.

Heat the pan: Heat a non-stick pan, apply a little oil on it and sprinkle drops of water on it, then wipe it with a cloth.

Spread the dosa: Lower the flame and pour a tablespoon of batter in the center of the pan and spread it outwards in a circular motion.

Bake: Add some oil or ghee on the edges. Cook on medium flame until the dosa becomes golden and crisp. After this, add potato masala in the middle and serve hot.
