Ingredients for Pua




1 cup wheat flour

3/4 cup jaggery (or 1/2 cup sugar)




1 cup milk

1 teaspoon fennel seeds
1-2 teaspoons grated coconut (optional)




Ghee or oil for frying




Preparation Method




To create the traditional Pua for Holi, start by warming some milk in a bowl and thoroughly dissolving the jaggery in it. Ensure that there are no lumps left. Next, incorporate the wheat flour (or refined flour) and a bit of semolina into the mixture. Whisk it well to avoid any lumps.






The batter should achieve a consistency similar to that of pakora batter—not too thin or thick. Then, mix in the fennel seeds and cardamom powder. Optionally, you can add some grated coconut for an extra burst of flavor.
