How to make fried idli

Making fried idli is very easy. For this, first of all cut the idli into small cubes or four pieces. If the idli is kept in the fridge, then let it come to normal temperature first. Light hard idli is better for frying as it does not break.

Heat oil in a pan on medium flame. When the oil becomes hot, add mustard seeds to it. When mustard seeds start crackling, add cumin seeds and curry leaves. Now add chopped onion to it and fry until it becomes light golden. After this, add ginger-garlic paste and green chilli and stir for 1 minute so that the raw smell goes away.

Now add turmeric, red chilli powder and salt. Fry the spices on low flame for 30 seconds. After this, put the cut idli pieces in the pan and mix gently so that the masala coats each piece well.

Fry the idli while stirring on medium flame for 5-7 minutes. When the edges of the idli become lightly crisp and golden, add garam masala and lemon juice. Finally sprinkle green coriander and turn off the gas.

Serve hot fried idli with coconut chutney, tomato sauce or green chutney. If you wish, you can also sprinkle some chaat masala on top. This recipe is delicious as well as a great use of leftover idlis.
