If there is too much oil floating on the gravy, add ice cubes to a clean steel bowl and gently swirl them over the gravy. The cold will cause the oil to solidify and stick to the bowl. Then, remove the bowl and drain the oil. This process can be repeated two or three times if needed.

This is a very easy and cheap method. Gently place a dry bread slice or plain roti on top of the gravy. It will absorb excess oil within a few seconds. Be careful not to keep the bread for too long, otherwise it may break. After this, filter it. This will balance the taste of the gravy.
Cut boiled potatoes into small pieces, add them to the gravy and cook for 4-5 minutes. Potato absorbs a lot of oil. You can drain the potatoes later or mash them into the curry. Similarly, adding smaller balls of flour can also reduce more oil.
