Potato Soup: A Special Companion for Winter

necessary materials


Boiled potatoes – 3
Butter – 1 tablespoon
Garlic – 4 to 5 cloves (finely chopped)
Onion – 1 small (finely chopped)
Flour – 1 tablespoon
Milk – 1 cup
Vegetable stock or water – 2 cups
Salt – as per taste
Black pepper powder – half teaspoon
Fresh cream – 2 tbsp
Green Coriander or Spring Onion – to garnish





Method of preparation


Mash the boiled potatoes well. Heat butter in a deep pan. When the butter melts, add garlic and onion and fry on low flame, until the onion becomes light golden.


Now add flour to it and keep stirring on low flame for about a minute, so that the rawness of the flour goes away. After this, slowly add milk and stir continuously, so that lumps do not form in the mixture. When it starts thickening a bit, add mashed potatoes and vegetable stock.


Let the soup cook on medium flame for about 8 to 10 minutes. Finally add salt, black pepper and fresh cream and mix well. Turn off the gas and garnish the soup by adding green coriander or spring onion on top.
