Uttarayan, also known as Makar Sankranti, is one of the most vibrant festivals in Gujarat, celebrated with kite flying, music, and mouthwatering food. Among all festive delicacies, Undhiyu holds a special place. Popularly known as Jethalal’s favorite dish in the TV show Taarak Mehta Ka Ooltah Chashmah, Undhiyu is a traditional Gujarati vegetable preparation that combines taste, nutrition, and heritage.


Made using a mix of seasonal vegetables like root vegetables, green leafy vegetables, Surti papdi, raw bananas, beans, and brinjal, Undhiyu is slow-cooked with aromatic spices. Traditionally, it is prepared in an earthen pot that is placed upside down on a slow flame, allowing the vegetables to cook in their own moisture. This method enhances flavor and preserves nutrients, making Undhiyu a true superfood for winter.


However, despite its health benefits, some children and even adults hesitate to eat Undhiyu due to its complex texture or strong flavors. The solution? Give Undhiyu a modern twist by turning it into tasty veg wraps. This innovative idea makes the dish more appealing, portable, and kid-friendly—perfect for festive snacks.

Ingredients Required for Veg Undhiyu Wraps

To prepare 2–3 Undhiyu wraps, you will need:



  • 2 whole wheat rotis or tortillas


  • 1 cup cooked Undhiyu


  • 2 tomatoes


  • 2 onions


  • 2 tablespoons tomato sauce


  • 2–3 tablespoons green chutney


  • 1–2 tablespoons oil


  • A small amount of grated or crushed cheese


  • Optional vegetables: cucumber, radish, lettuce



How to Make Veg Undhiyu Wraps at Home

Step 1:
Wash the tomatoes and slice them into thin, round pieces. Peel the onions and cut them into fine slices. If you’re adding cucumber or radish, slice them thinly as well.


Step 2:
Heat a pan and lightly grease it with oil. Warm the roti or tortilla on one side until soft and slightly crisp on the other.


Step 3:
Place the roti on a flat surface. Spread green chutney evenly using a spoon, followed by a layer of tomato sauce.


Step 4:
Sprinkle a thin layer of grated cheese over the sauces. This adds creaminess, flavor, and protein.


Step 5:
Arrange tomato slices, onion slices, and other raw vegetables on top.


Step 6:
If the Undhiyu vegetables are large, chop them into smaller pieces. Spread a generous layer of Undhiyu evenly over the roti.


Step 7:
Add a little more cheese if desired. Carefully roll the roti tightly to form a wrap.
