Carrot Pickle Recipe: Pickles increase the taste of food manifold and there is a different pleasure in eating spicy pickles. Carrot Pickle Recipe

Material



  • Red Desi Carrot – 1 kg

  • Mustard oil – 250 ml

  • Salt – as per taste

  • Turmeric powder – 1 tsp

  • Red chilli powder – 2 teaspoons

  • Mustard (coarsely ground) – 3 tbsp

  • Fennel (coarsely ground) – 2 tablespoons

  • Fenugreek seeds – 1 tsp

  • Asafoetida – 1 pinch

  • Vinegar or lemon juice – 2 tbsp

Method


1. Wash and dry the carrots thoroughly. Keep in mind that there should be no moisture at all in them. Now cut the carrots into 2 to 3 inch lengthwise pieces.


2. Dry the cut carrots in the sun for a day so that the moisture present in them gets removed.


3. Put carrots in a large bowl. Add salt, turmeric, red chilli, mustard seeds, fennel and asafoetida and mix well.


4. Now heat mustard oil in the pan. When smoke starts rising from the oil, turn off the gas and let the oil cool down. After it cools down, add the oil to the spiced carrots and mix well.


5. If you wish, add vinegar or lemon juice at the end. Now fill the pickle in a clean and dry glass jar. Keep the jar in the sun for 4 to 5 days and keep stirring it with a clean spoon every day.

Tips to ensure that pickles do not spoil in winter


1. Carrots and jars should be completely dry.
2. Always use dry and clean spoon only.
3. Add mustard oil in sufficient quantity.
4. If there is sunlight daily, the pickle remains good for a long time.
