Winter is the perfect season to enjoy warm, comforting dishes - and Undhiyu is one such special delicacy. A traditional Gujarati dish, Undhiyu becomes even more flavorful during the cold months. Packed with seasonal vegetables, spices, and wholesome ingredients, it offers both taste and nutrition, Here’s an easy way to make this winter favorite at home:-



- Ingredients




Radish – 1 cup (chopped)



Sweet potato – 1 cup (chopped)



Small eggplants – 2 (cut into four pieces)



Tomatoes – 2–3 (chopped)



Carrots – 1 cup (chopped)



Green peas – ½ cup



Cauliflower – 1 cup (cut into florets)



Whole green chilies – 2–3



Cabbage – 1 cup (chopped)



Fresh coriander – 2 tbsp (chopped)



Rock salt – to taste



Ghee or oil – 2–3 tbsp



- Recipe - Step-by-Step :




1. Prepare the VegetablesWash all the vegetables thoroughly and chop them into equal-sized pieces so they cook evenly.



2. Prepare the Undhiyu MasalaIn a small bowl, mix:



1 tbsp cumin seeds



1 tsp chopped green chilies



1 tbsp ginger-garlic paste



½ tsp turmeric



1 tsp garam masala



1 tbsp sugar




Then add:



1 tbsp sesame seeds



1 tbsp red chili powder



1 tbsp coriander powder



This masala gives Undhiyu its rich, authentic flavor.



3. Sauté the Vegetables

  • Heat ghee or oil in a pan.

  • Add asafoetida (hing), cumin, and whole chilies.


Once they crackle, add:





  • Eggplants, sweet potatoes, carrots, cauliflower, radish, cabbage, and rest of the vegetables.

  • Mix well.

4. Add Masala & Cook

  • Add the prepared masala and salt.

  • Mix everything gently.

  • Pour ¼ cup water, cover the pan, and cook on low flame for 15–20 minutes.

  • Stir occasionally to prevent burning.

- Final Touch

  • When the vegetables are soft and well-cooked, add green peas and chopped coriander.

  • Let it cook for 5 more minutes.

- Serve Hot





  • Serve Undhiyu hot with parathas, chapati, or steamed rice.

  • Its taste becomes even more amazing during winter - warm, flavorful, and wholesome.
