As winter sets in, many of us find ourselves craving something sweet. Instead of opting for unhealthy store-bought treats, why not whip up some delightful desserts at home? One such treat is Moong Dal Halwa.




Although preparing Moong Dal Halwa requires some effort, the incredible taste makes it all worthwhile. Here’s a detailed guide on how to make this delicious dessert.







Ingredients
1/2 cup yellow moong dal (washed)
1/2 cup pure ghee
1/2 to 3/4 cup sugar (adjust to taste)
1 cup milk or a blend of milk and water
1/2 cup mawa/khoya
1/2 teaspoon cardamom powder
A few saffron strands (soaked in warm milk)
2 tablespoons chopped nuts (like cashews, almonds, or pistachios)




Preparation Steps
Begin by thoroughly washing the moong dal and soaking it in water for 3 to 4 hours or overnight. Once soaked, drain the dal.




Next, grind the soaked dal in a mixer until it reaches a coarse consistency, using minimal water. The texture should resemble that of semolina, not too fine.




In a heavy-bottomed pan, heat about 1/2 cup of pure ghee over medium heat. Once hot, add the coarsely ground dal. Lower the heat and stir continuously for about 15 to 25 minutes.




Continue roasting the dal until it turns a golden yellow and releases a delightful aroma. The dal should look grainy, and the ghee will start to separate from the sides of the pan.




If using mawa, lightly roast it before mixing it into the dal for a creamier texture. Gradually add the hot milk or a milk-water mixture while reducing the heat.




Incorporate the soaked saffron strands into the hot milk. Stir continuously to avoid lumps, as the dal will quickly absorb the milk and swell.




Once the dal has absorbed the milk and the mixture thickens, add sugar and cardamom powder to taste. The halwa will thin out slightly as the sugar dissolves.






Cook until the sugar water evaporates completely, and the halwa thickens again, pulling away from the pan. Finally, mix in the chopped nuts.




For an extra touch of flavor and shine, drizzle 1 teaspoon of ghee over the halwa before serving and mix well.
