Waking up to a cold breezy morning to cook an elaborate breakfast, may seem like the most daunting task! Well, if you too have been there, and want a simple way to make your breakfast interesting yet tasty? Then it is time to quickly recreate some delightful breakfast treats that too in a microwave. In fact, these quick recipes require minimal ingredients, little prep, and can be cooked in minutes, making them ideal for lazy or busy mornings.



Sevai Upma

Sevai Upma is a South Indian light breakfast made with vermicelli noodles. In a microwave-safe bowl, mix vermicelli with oil and microwave briefly. Add water and cook until tender. Meanwhile, prepare a seasoning of mustard seeds, curry leaves, cumin, onions, green chilies, turmeric, and peanuts in the microwave, then mix this into the cooked vermicelli. Garnish with coriander and serve hot.



Roasted Chickpeas

This tasty and crunchy snack can be made by roasting/baking it in a microwave after draining soaked chickpeas by tossing them with some oil and spices like cumin, paprika, chaat masala, salt and pepper.



Vegetable Chaat

To make this recipe, microwave and bake the potato, then add diced cucumbers, tomatoes, onions, green chilies, soaked chickpeas and boiled potatoes, which is topped with a spiced curd. Garnish with sev and coriander leaves and enjoy!





Grilled Paneer Tikka

Paneer Tikka is a delicious and healthy grilled snack made by marinating paneer cubes in a mixture of curd, ginger garlic paste, spices and herbs. Grill it in a microwave by basting some lemon juice, tandoori masala and enjoy with a dip or chutney.



Cucumber raita with baked fries

Cucumber Raita is a wholesome snack, which can be paired with veggie sticks or beetroot baked fries. To make this refreshing raita mix grated cucumber, curd, roasted cumin powder, red chili powder, salt and pepper and chopped mint leaves.



Steamed Dhokla

To make this healthy dhokla, make a simple fermented batter of besan (gram flour) and prepare it by steaming instead of frying. Season with mustard seeds, curry leaves, and green chilies. Enjoy with chutney.



Chivda

Chivda is a popular Indian snack made from flattened rice (poha) often eaten at breakfast or as a tea-time snack. Microwave oil with mustard seeds, cumin seeds, asafoetida, and curry leaves, then add peanuts and green chilies. Mix in turmeric and sugar, then add the flattened rice and microwave for a few minutes, stirring in between. Enjoy this with boiled green peas, salt and pepper for a wholesome breakfast treat paired with chai.



Veggie Sticks with Hummus

To make these simple veggie sticks, wash and cut veggies in strips and marinate them with spices and herbs along with a dash of olive oil. Bake them in an air fryer or an oven and serve them hot with freshly made hummus made with soaked chickpeas, tahini, garlic and olive oil, salt and paprika.
