Method of preparation (Step-by-Step Recipe) Step 1: Remove moisture. Heat the pan or heavy pan on very low flame. Now add all the remaining spices (cardamom, cloves, black pepper, cinnamon, fennel) except dry ginger and nutmeg. They have to be lightly roasted for just 2 minutes. Remember, do not burn the spices, just remove their moisture so that they do not spoil for a long time and it becomes easier to grind. Turn off the gas as soon as the aroma comes. Step 2: Correct method of grinding. When the roasted spices cool completely, put them in the mixer jar. Now add nutmeg (broken) and dry ginger powder to it. After this, run the mixer.Tip: Do not run the mixer continuously, otherwise the spices will heat up and lose their oil and aroma. Grind it on “pulse mode” (intermittently) and make a fine powder. Step 3: Store Now, your delicious and aromatic ‘chai masala’ is ready! Immediately fill it in an air-tight glass jar and keep it. Do not keep it in a plastic box, otherwise the aroma will evaporate. How to use? Whenever you make tea, do not take the effort of crushing ginger and cardamom. Just add a pinch (less than ¼ teaspoon for a cup) of this spice while boiling the tea. After adding sugar and milk, boil it. Not just taste, but also health. This powder does not just enhance the taste of the tongue.
