In a video shared on Instagram, Emily English, a nutritionist and best-selling author, revealed what she eats on such an occasion.
One-pot meal to the rescue
Lazy-girl meals are taking the internet by storm. While most of them may look gram-worthy and easy to cook, some fall short in terms of nutritional value. But that’s not the case here. It’s a perfect marriage of nutrition, convenience and good looks.
Eating healthily doesn’t necessarily mean boring, bland and hours in the kitchen. English proves that healthy food can also be delicious and easy to cook. Her saviour on days when she cannot cook is a one-pot Thai green noodle dish . “This is the recipe that I make when I don’t want to cook but want something fresh, filling and healthy,” she said in the video.
Why this recipe works when you're running on empty
The beauty of this Thai green noodle dish lies in its deceptive simplicity. The only effort you have to make is chopping some of the veg. This meal is packed with protein, lots of green vegetables and anti-inflammatory spices, which warm your gut and soul. “It's super versatile: you can swap the vegetables for whatever you have in your fridge and use whatever protein you like. Tip all into one pan, cover and leave to simmer until everything is cooked. Portion up and feel free to top with extra spring onion, coriander and some chilli,” the nutritionist said. The delectable bowl has 450 kcal with 24 g of protein, so your protein goals are met, and it isn’t calorie-dense either.

The pantry staples that save dinner
The secret weapon here is keeping a few key ingredients stocked. To make this succulent pot of Thai green noodles, you should keep a few staples in your pantry. English has shared her much-treasured recipe, which serves two people. The ingredients include:
- 1 tin light coconut milk
- 2 heaped tbsp Thai green curry paste
- 2 tbsp each fish and soy sauce
- 1/2 chicken stock cube
- 1 carrot, julienned or peeled into ribbons
- Handful tenderstem broccoli
- 1 red pepper
- 3 tbsp peas or edamame
- 160 g raw prawns
- 2 spring onions
- 2 nests dried egg noodles
“Tip the coconut milk into a large saucepan. Fill the tin back up with water and tip it in. Add the Thai paste, chicken stock cube, and soy and fish sauces. Bring up to a simmer. Prep your veg in the meantime. Mix, add the noodles into the centre, veg and prawns around. Cover with a lid and let simmer for 4–5 minutes until everything is cooked. Serve and enjoy,” she shared. You can also keep the leftovers in the fridge for two days.
