For rabri:
1 litre of milk
For malpua batter:
1 cup wheat flour
1 teaspoon semolina
2 cardamoms
Finely Chopped Nuts (Almonds, Pistachios)
For Syrup:
3/4 cup jaggery
2 cups water
For frying:
Ghee
For garnishing:
Finely Chopped Nuts
Rose petals
Make rabri: First, Boil 1 litre of milk in a large vessel, stirring continuously on a low flame, until it has reduced to half. When the milk has thicked to half its original volume, turn off the gas.
Make Syrup: In a separet vessel, boil 2 cups of water and jaggery. Cook until the Jaggery Dissolves Completely and the Syrup Thickens Slightly. Keep in mind that the syrup should neither be too thin nor too thick.
Prepare the malpua batter: Now, add flour, semolina, cardamom and nuts to the rabri and mix well. Make sure there are no lumps in the batter.
Fry the malpua: Heat ghee in a pan. When the ghee is hot, gently drop a tablespoon of the batter into the hot ghee. Fry Till Golden Brown on Both Sides.
Serve: Immedited Malpua in the Jaggery Syrup and let it sit for a less seconds. Transfer to a Plate and Garnish with Chopped Nuts and Rose Petals, and Serve Hot.
