Material for making makhane pudding
- Makhane – 1 cup
- Milk – 1 liter
- Desi Ghee – 1 teaspoon
- Sugar – 4 tablespoons (as per taste)
- Cashew-8-10 (chopped)
- Almonds-8-10 (chopped)
- Cardamom Powder – 1/2 teaspoon
- Saffron – Some threads (optional)
Method of making Makhane Kheer:
- First of all, wash and clean the makhans thoroughly. Heat 1 teaspoon of ghee in a pan and fry the makhanas in it till it becomes light golden. This will make Makhane crisp.
- Now after cooling them lightly, grind half the makhans in a mixer and keep half the whole.
- Keep milk boiling in a deep bottom vessel. When milk comes to a boil, add ground and whole makhana to it.
- Cook the milk on low flame with makhans for 15-20 minutes so that the makhane melts well in the milk and the kheer becomes thick.
- Now add sugar, cardamom powder, cashews, almonds and saffron and cook for 5 minutes more.
- When the kheer thickens well and all the tastes are found, turn off the gas.
- Makhane kheer is ready. It can be served by both cool or warm methods.
If you do not eat sugar during the fast, use jaggery or honey (mix after closing the gas). The amount of dry fruits in kheer can be done more or less according to your choice.
